Baked Stuffed Zucchini

I love meals when you have your meat and vegetables all in the same dish. It’s like a one stop shop but it’s your dinner! One dish meals are great and can require a little extra preparation but well worth it in the end. You know when you forget to go out to the garden for a few days and all of a sudden you have some very large zucchini that you have no idea what to do with? I’m going to tell you what to do with them, make Baked Stuffed Zucchini for dinner. If you’ve ever had stuffed peppers this is the same concept except with zucchini.

Baked Stuffed Zucchini
1 or 2 large zucchini (sometimes they are so large you only need one)
1 lb. ground beef or turkey, browned
2 cups of cooked rice or cooked elbow noodles (I prefer rice)
1 jar of your favorite spaghetti sauce
1 small onion, diced
1 egg
¼ tsp. of oregano and garlic powder
Salt and pepper to taste
½ cup of parmesan cheese, divided in half
*I add a teaspoon of brown sugar to mine.

Brown the ground meat and onion together and set aside.

Cut your zucchini in half lengthwise, scoop out the seeds and leave at least half inch of flesh inside. In a medium bowl mix all of your ingredients together except half a cup of the spaghetti sauce and ¼ cup of parmesan cheese.

Put the zucchini in a 9×13 baking dish then scoop your stuffing into them. When the zucchini are stuffed drizzle the remaining spaghetti sauce over them and top with the parmesan cheese.

Cover with foil and bake in a preheated 350 degree oven for 50 to 60 minutes.
