Healthy After School Snacks

It’s amazing how fast the summer just flies by and then all of a sudden school starts again. One big problem for a lot of people is getting their children to eat healthy snacks. I have come up with a simple way to have a healthy after school snack ready for you children and they can be prepared ahead of time.

Veggie and Cheese Kabobs
Wooden coffee stirrers(skewers if age appropriate)
Cheese cubes
Cucumber slices, thick and seedless work best
Pepper slices, sliced thick
Cherry tomatoes

Alternate putting the veggies and cheese on the stirrers, wrap or put into containers in the refrigerator. Enjoy with their favorite dip or hummus.

Hummus Dip (without tahini)
1 can of garbanzo beans (chickpeas)
¼ c. olive oil
1 tbsp. lemon juice
1 tsp. cumin

In a food processor, blend all ingredients together until smooth and creamy. Serve immediately or refrigerate until you are ready to serve.

Fruit Kabobs
Wooden coffee stirrers
Grapes
Strawberries
Blueberries
Cantaloupe
Watermelon

Alternate putting the fruit on the stirrers, wrap or put into containers in the refrigerator. Strawberry yogurt makes a great dip for the fruit kabobs.
