School is going to be starting soon and thoughts of packed lunches and after school snacks is what keeps coming to my mind. I have three school aged boys and it seems like they eat constantly. Lunches get boring for all of us so I always try to come up with new things to do with ingredients I usually have in the house. Wraps are a great way to bring something new to your child’s lunches especially since their possibilities are endless.
Chicken Avocado Wrap
1 chicken breast, cooked and finely chopped
1 avocado, cubed
8 cherry tomatoes, halved
½ cup shredded sharp cheddar cheese
1 cup shredded lettuce
1 cup turkey bacon, crumbled
Flour tortilla wraps (wheat, spinach or sun-dried tomato work well)
Mix all ingredients together except the lettuce. Spoon the mixture on your wrap. Top with shredded lettuce. Drizzle with your favorite dressing or olive oil and lime juice. Roll, slice and store for lunch time.
Buffalo Chicken Wrap
1 chicken breast, cooked and finely chopped
3 to 4 tablespoons ranch dressing
Texas Pete or Frank’s Hot sauce, enough to drizzle on each wrap (I actually like to cook my chicken breast marinated in the hot sauce)
For these chicken wraps you can use your regular flour tortillas or use my favorite iceberg lettuce leaves. I tear off large leaves of iceberg lettuce and wash and dry the lettuce before making my wraps.
For each of these recipes you can substitute turkey in them and you can make one to three wraps depending on the size of your chicken or turkey breast and the size of the wrap.
The best way to store the wraps is in a plastic container and placed on a frozen ice pack in your child’s lunchbox.
