Crabbing season is coming to an end but you can enjoy them all winter. This time of year is a great time to get a cheap bushel of crabs and pick them to freeze the crabmeat. I love to make crab dip all year long. It has become a comfort food of mine. I have tried many, many crab dip recipes and this one has come to be my favorite.
Crab Dip
3 oz. cream cheese, softened
1 c. mayonnaise
1 8 oz. pkg. shredded cheddar cheese
2 tsp. old bay seasoning
1 ½ tbsp. Dijon mustard
1 lb. crabmeat
Stir the softened cream cheese and mix in the mayonnaise, 1 cup of the shredded cheddar cheese, old bay seasoning and the Dijon mustard. Gently mix in the crabmeat and sprinkle a little old bay seasoning on top. Bake in a casserole dish at 350 degrees for 25 minutes. Sprinkle the rest of the shredded cheddar cheese on top and bake 10 more minutes. Take out of the oven and let sit for 10 minutes before serving.
Serve immediately with crackers, bread or veggies.
