Blueberry season is upon us, yay!! If you love blueberries as much as I do then you are probably trying to incorporate them into many recipes. While you can always put blueberries in pancakes and fruit salads it’s always nice to have a fresh blueberry cake especially one that is easy to make. My Blueberry Buckle cake is great for a dessert or a breakfast coffee cake.
¾ cup sugar
¼ cup shortening
½ cup milk
2 cups flour
2 tsps. baking powder
½ tsp. salt
Topping: ½ cup sugar, 1/3 cup flour, ½ tsp. cinnamon and ¼ cup butter, softened.
Preheat oven to 375 degrees. Grease an 8×8 baking dish and set aside. Cream together the sugar, shortening and egg. In a separate bowl mix together the flour, baking powder and salt. Stir into sugar mixture alternating with the milk. Stir in the blueberries last and pour in to your greased pan. Mix together the topping ingredients and sprinkle over the cake batter.
Bake at 375 degrees for 25 to 30 minutes. Cool completely, serve and enjoy!
