I can’t believe school is starting already! This is actually my favorite time of year because I love fall and it’s just around the corner. With school starting, you may need some breakfast and lunch ideas. There’s something about fresh, hot waffles, but there’s usually not enough time on a weekday morning to make them. I’ve come up with a great easy recipe for a PB&J waffle sandwich that is good for breakfast or lunch.

PB&J “WAFFLE” SANDWICHES

1 16 oz. can refrigerated biscuits, the large kind but make sure there is 8 in the package
1/2 cup peanut butter, creamy or chunky
1/4 cup jelly or jam (your favorite)
powdered sugar
optional fresh fruit

Heat your waffle iron, according to its directions. Take out 8 biscuits and roll them to about 4 inches in diameter. Place 2 to 4 biscuits on the hot waffle iron (depends on the size of the iron). Cook 2 minutes or until light brown. Cool a bit then spread the peanut butter on 4 and the jelly on 4. Put sandwiches together and cut in half. (Cool waffles completely if making them for lunches.) If using powdered sugar sprinkle before serving and serve with fresh fruit. Enjoy and have a great school year! That goes for parents too!
